Default Bp/w

How does one know which BP to buy as far as weight. I want something that will work with one or two tanks, probably Al 80's to start, but will probably not be doing two tanks for a while.)

Basically speaking, any backplate will work with anything. I would suggest stainless steel since it redistributes some weight behind you and is more durable than plastic or whatever those things are.
Manufactures will tell you what wings can handle what configutation of tanks. As an example, here is a link to DiveRite's page:

If you are going to be switching between singles and doubles a single tank adapter is nice to have. Saves you from rethreading cam bands all the time.
